Do live projects actually reflect real job work, or are they simplified versions?

A lot of training institutes talk about “real client projects,” but many are just guided assignments. While checking one Full Stack Course in Pune, I noticed they include multi-module apps that feel closer to actual work.
For those who’ve done such projects — how realistic were they? Did they mimic real workflows like version control, team collaboration, or debugging complex issues? Or were they simplified so beginners don’t get overwhelmed?
I feel understanding this helps set expectations before joining any course.
